  • 4 large bell peppers, any color
  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1/2 cup frozen corn kernels

  • 1/2 cup shredded cheese (such as cheddar or mozzarella)
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  1. Preheat the oven to 375°F (190°C). Line a baking dish with parchment paper.
  2. Cut off the tops of the bell peppers and remove the seeds and membranes from the inside.
  3. In a large bowl, mix together cooked quinoa, black beans, frozen corn, diced tomatoes, shredded cheese, olive oil, cumin, paprika, salt, and pepper.
  4. Stuff the bell peppers with the quinoa and black bean mixture, pressing it down lightly to fill the peppers evenly.
  5. Place the stuffed bell peppers in the prepared baking dish and bake in the preheated oven for 25-30 minutes, or until the bell peppers are tender and the filling is heated through.
