Kachri Ki Sabzi (Indian Cucumber Curry)

Kachri Ki Sabzi is a curry made with kachri, a wild cucumber found in arid regions of India. It has a tangy flavor and is commonly used in Rajasthani cuisine.

  • 2 cups kachri (dried wild cucumbers)
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala (Indian spice blend)
  • Salt to taste
  • Fresh cilantro leaves for garnish
  1. Soak the dried kachri in water for about 2 hours until they soften.

  2. Heat oil in a pan and add cumin seeds. Once they start spluttering, add finely chopped onions and sauté until golden brown.

  3. Add ginger-garlic paste and cook for a minute. Then add chopped tomatoes and cook until they turn mushy.

  4. Add turmeric powder, red chili powder, garam masala, and salt. Mix well.

  5. Drain the soaked kachri and add them to the pan. Stir-fry for a few minutes.

  6. Add water as needed to achieve the desired consistency of the curry. Cover and simmer for 10-15 minutes until the kachri is cooked.

  7. Garnish with fresh cilantro leaves and serve hot with rice or roti.
