  • 1 head cauliflower, cut into florets
  • 2 tablespoons miso paste
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/2 pound spaghetti
  • Freshly grated Parmesan cheese for serving
  • Chopped fresh parsley for garnish
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a bowl, whisk together miso paste, melted butter, olive oil, minced garlic, and red pepper flakes.

  3. Toss the cauliflower florets in the miso butter mixture until evenly coated. Spread them in a single layer on the prepared baking sheet and roast in the preheated oven for 20-25 minutes until golden brown and crispy.

  4. Cook spaghetti according to package instructions until al dente. Drain and reserve 1/2 cup of pasta water.

  5. In a large pan, combine the cooked spaghetti, roasted cauliflower, and reserved pasta water. Stir-fry for a few minutes until the flavors meld together.

  6. Serve hot with freshly grated Parmesan cheese and chopped fresh parsley on top.
