Miso Butter Spaghetti with Roasted Cauliflower is a delicious and flavorful pasta dish that combines the umami-rich flavors of miso and butter with the nutty sweetness of roasted cauliflower.

- 1 head cauliflower, cut into florets
- 2 tablespoons miso paste
- 2 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/2 pound spaghetti
- Freshly grated Parmesan cheese for serving
- Chopped fresh parsley for garnish
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, whisk together miso paste, melted butter, olive oil, minced garlic, and red pepper flakes.
Toss the cauliflower florets in the miso butter mixture until evenly coated. Spread them in a single layer on the prepared baking sheet and roast in the preheated oven for 20-25 minutes until golden brown and crispy.
Cook spaghetti according to package instructions until al dente. Drain and reserve 1/2 cup of pasta water.
In a large pan, combine the cooked spaghetti, roasted cauliflower, and reserved pasta water. Stir-fry for a few minutes until the flavors meld together.
Serve hot with freshly grated Parmesan cheese and chopped fresh parsley on top.
