Cook the diced bacon in a large skillet over medium-high heat until crispy.
Remove the bacon from the skillet and set aside.
Add the diced sweet potatoes, onion, garlic, smoked paprika, salt, and pepper to the skillet with the bacon fat.
Cook for 15-20 minutes, stirring occasionally, until the sweet potatoes are tender and lightly browned.
Stir in the cooked bacon and garnish with chopped parsley, if desired.
