Paleo Sweet Potato and Bacon Hash

  • 2 large sweet potatoes, peeled and diced
  • 6 strips of bacon, diced
  • 1 small onion, diced

  • Salt and pepper to taste
  • Optional: chopped parsley for garnish
  1. Cook the diced bacon in a large skillet over medium-high heat until crispy.

  2. Remove the bacon from the skillet and set aside.

  3. Add the diced sweet potatoes, onion, garlic, smoked paprika, salt, and pepper to the skillet with the bacon fat.

  4. Cook for 15-20 minutes, stirring occasionally, until the sweet potatoes are tender and lightly browned.
