Vietnamese Shrimp Spring Rolls
These spring rolls are fresh, flavorful, and a great option for those with gluten sensitivities or those who follow a gluten-free diet. They are often served with a dipping sauce made from fish sauce, sugar, lime juice, garlic, and chili peppers for added flavor.

- Rice paper wrappers
- Cooked shrimp, peeled and deveined
- Rice noodles, cooked according to package directions
- Carrots, thinly sliced
- Cucumber, thinly sliced
- Bean sprouts
- Cilantro
- Mint leaves
- Peanut sauce for dipping
- Soak a rice paper wrapper in warm water for a few seconds until it softens.
- Place the wrapper on a flat surface and add the cooked shrimp, rice noodles, carrots, cucumber, bean sprouts, cilantro, and mint leaves on top of the wrapper.
- Fold the sides of the wrapper over the filling and roll it up tightly.
- Repeat with the remaining ingredients.
- Serve the spring rolls with peanut sauce for dipping.
